A revolutionary treatment for severe adult depression is continuing to change lives in Northwest Kansas. Due to continued positive outcomes and volume of need, High Plains Mental Health Center is adding a second Transcranial Magnetic Stimulation (TMS) treatment facility in Hays. TMS treatment capacity has increased from 14 to 28 people each weekday, significantly increasing capacity to serve more clients who qualify for the medication-free treatment, said Dr. Mark Romereim, medical director.

“As our patients have experienced the benefits of TMS treatment, they have started spreading the word of how much it has helped them to their friends and families, as well as their health care providers, which has increased the need for us to be able to provide this life-altering treatment for people in our area,” Romereim said. “We are very excited to have another treatment unit available, which will not only allow us to be able to treat more people at a time and minimize any wait to get treatments started, but also will allow us more ability to work around patients’ work schedules, so that they can come in before or after work, or over their lunch time.”

TMS is a medication-free treatment that is approved for clients older than 15 with treatment-resistant depression, meaning other types of treatment have not been effective. The device transmits gentle electro-magnetic pulses that stimulate specific areas of the brain, influencing brain activity and improving symptoms. The treatment is provided under the supervision of a psychiatrist and is individualized for each client using brain mapping to identify the precise treatment location. With TMS, patients have an 83 percent chance of improvement and a 62 percent chance of illness remission.

Treatment sessions usually last about 19 minutes. It is an outpatient procedure and individuals receiving services can immediately resume normal activities. A typical treatment course is once daily every weekday for seven weeks, totaling 36 sessions. TMS has had FDA approval since 2008, so it’s not a new treatment, but it has taken insurance companies time to provide coverage. HPMHC purchased TMS equipment from a company called NeuroStar, which has provided treatment to nearly 200,000 people at more than 1,500 service sites across the nation. The treatment can be “life-altering” for individuals with major depressive disorder, anxious depression or obsessive-compulsive disorder, Romereim said.

Don Yost, Hays, knows first-hand how beneficial TMS treatment can be. He completed his seven-week course of treatment on April 4 and gradually has experienced remarkable changes in his thoughts, mood and overall functioning, he said. Yost had been diagnosed with treatment-resistant depression, anxiety, and PTSD following active duty military service and combat trauma. Yosts’ unit was hit with an improvised explosive device during a tour in Iraq, leaving him with traumatic brain injury and other complications.

Yost enlisted in the Army right after graduating from high school in Bazine, and served for several years in the Army. He was medically retired following the attack on his convoy in Iraq, and that’s when his mental health really began spiraling.

“My life from that point forward was never going to be the same,” Yost said. “All I knew was ‘work, work, work,’ and ‘military, military, military.’ So to get thrown out in the civilian world was kind of a knock down, I guess you’d say.”

Yost’s injuries left him facing a significant recovery process, basically learning how to walk and talk again, he said. As his physical health improved, he began seeking a new purpose and attended motorcycle mechanic school in Arizona. His mental health, however, was still spiraling, and he was struggling badly with PTSD symptoms and flashbacks. Eventually, that led to anxiety and depression, as well as self-medicating with drugs and alcohol. Yost, at the height of desperation, attempted suicide multiple times.

Yost moved back home to Northwest Kansas, began seeking treatment for his mental health challenges, and was eager to try TMS when it became available in Hays. For him, the treatments (which usually take about 20 minutes) were very relaxing and he usually took a nap when he got home. Other than that, he did not notice any side effects.

“The TMS, what it did for me, now I can go out in public. I wasn’t able to do that,” he said. “TMS has done so much for me. It’s a miracle, I guess you could say.” As his symptoms improved, Yost has been able to connect with a regional Christian men’s ministry called Encounter and volunteers as a server. He also holds a leadership role with the Forty and Eight veterans’ organization, providing tours of the Kansas Merci Boxcar and advocating for veterans’ PTSD awareness every chance he gets.

While TMS is primarily for treatment-resistant depression, Yost said he has also noticed a reduction in his anxiety and PTSD symptoms. The triggers are still there, he said, but they come less often. TMS is not FDA-approved for primary PTSD treatment, but there is frequent overlap between PTSD and depressive symptoms, Romereim said, noting there is growing research that TMS could be effective for anxiety and PTSD symptoms.

Most payor sources, including VA benefits, Tricare and Blue Cross, cover the cost of TMS treatment. In Kansas, KanCare Medicaid is currently the exception, but HPMHC staff are advocating for that to change.

“I’m a lot happier,” Yost said of his experience after TMS treatment, noting his overall thought patterns have become more positive. “It’s little by little. Somedays there’s bigger jumps than others.”

Yost said he would not hesitate to encourage others with severe depression symptoms to consider TMS.

“Go for it, give it a shot. Your whole world is going to change. It’s going to change something, even if it doesn’t change everything you expect, but go in there with an open mind and open heart,” he said.

High Plains Transcranial Magnetic Stimulation expanding, continues to change lives

The little girl waited breathlessly that Christmas Eve as the pastor at her church in central Romania distributed boxes of brightly wrapped shoebox gifts to all the children in the room.

The children were seated in horizontal rows. The first row received boxes and then passed them over their heads to the row behind them. That row did the same, with each row repeating the process, to the back row.&nbsp;

The event was an Operation Christmas Child (OCC) gift distribution. Finally, 6-year-old Lorena Surducan had her box. The pastor asked the children to place their hands on their box as he led them in prayer to bless the person who had prepared their gift.

Then the pastor began his countdown, and all the paper went flying as the children opened their gifts at the same time, amidst squeals of delight.

But Lorena was careful about opening her gift. The paper was so pretty, she wanted to save it, she said.

Surducan told her story of that special night when she spoke in Hays May 28 at North Oak Community Church.

Operation Christmas Child is a ministry of Samaritan’s Purse, an international relief organization headquartered in Boone, N.C. Each year thousands of people fill simple shoeboxes with toys, school supplies, and hygiene items.

The boxes are collected during November each year and are shipped to children in need. According to data provided by the ministry, “Since 1993, over 232 million shoebox gifts have been collected for children in over 170 countries and territories.”

Rachel Albin of Hays, the Northwest Kansas Area Coordinator for OCC, said for many children this is the first gift they have ever received. Inside each box is a pamphlet in the child’s language talking about Jesus and his love for each child. Albin said this is the first time many of these children have heard of Jesus also.

But that was not the case for Surducan. She and her sister grew up in a Christian home, and she had heard about God from an early age.

“My mother taught us how to pray, and she read us a Bible story each night before bed,” Surducan said.

Although she didn’t know it at the time, she said her father often prayed that God would provide when there was little money for food or bills. And God always did.

A few years before attending the OCC event at her church, Lorena and her sister got hold of a catalog from a U.S. department store. The little girls were mesmerized by the toys they saw. Toys were not sold in Romanian stores, Lorena said.

The toy that captured her attention the most was a Barbie doll, and she told her mother she wanted one. Her mother suggested that she pray and ask God for the doll.

For several years, each night during her bedtime prayers, Lorena would ask God for a Barbie doll. As she opened her OCC shoebox gift that Christmas Eve, she carefully looked through the contents—school supplies, glittery pens, a matching hat, mittens, and scarf set.

Then, at the very bottom of her box was a Barbie doll.

Surducan said, “The impact of this on my life was just fantastic. If God cares so much about this one prayer, don’t you think he cares about other prayers? If he cared so much for this one little girl, wouldn’t he care about other children?”

That faith has sustained Surducan throughout her life. In 2015 she moved to the United States to attend college at Mississippi University for Women in Columbia, Miss. Her church there was a drop-off location for OCC shoebox gifts.

Surducan casually mentioned to one of the church volunteers that she had received such a gift when she was a child. The volunteer took note and contacted people at Samaritan’s Purse’s headquarters.

Soon Surducan was sharing her story across the South. At one point she moved to Florida where she met and married her husband, Bryson. Then two years ago, they moved to Lawrence, Kan., so Lorena could continue her education in Music Therapy at the University of Kansas.

A year ago, 29-year-old Bryson suffered a stroke. On the ride to the hospital, Surducan said she realized she had two choices: “I could give in to panic, or I could trust God and his faithfulness.”

She began to pray, releasing her husband to God, no matter the outcome. She said she immediately experienced peace.

“The faith that began years ago resulted in my ability to pray this biggest prayer of my life,” she said.

The doctors placed Bryson in ICU and ran many tests, but they were never able to figure out what caused the stroke, Lorena said. A few days later Bryson walked out of the hospital and has experienced no after-effects of his stroke, she said.

Albin, who oversees the shoebox collections in 15 Northwest Kansas counties, including Ellis County, said last year those residents packed 13,602 boxes, and she is hoping for more this year.

Only God could have orchestrated the journey that one box took in reaching Lorena, Albin said.

“Each child who receives a box is praying for something special,” Albin said. “As we pack shoeboxes, may we pray that God will lead us in selecting what we put in our boxes.”

This year’s shoebox National Collection Week is Nov. 17-24. North Oak Community Church, where Surducan spoke, packed 768 boxes last year, said LuAnn Walters of Hays, North Oak’s OCC coordinator. Naturally, she is hoping for more this year also.

Walters said many area churches, including North Oak, have special events throughout the year, where members paint blocks for younger children’s boxes, sew simple dresses, and prepare pencil packs and hygiene kits. North Oak’s adults and children also participate in “packing parties” prior to collection week.

Operation Christmas Child: The story of a simple gift, impact that it had

In its first year partnering with Fort Hays State University’s Science and Math Education Institute (SMEI), RAISE Kansas is making big strides in connecting rural students with career-ready opportunities.

RAISE Kansas—formerly known as STEMM FIRE—is a rural education initiative powered by a Patterson Family Foundation grant and generous donors. Its mission is to expand opportunities for young people in rural Kansas by providing hands-on experiences, mentorship, and exposure to high-demand careers in science, technology, engineering, mathematics, and medicine (STEMM).

Formed in 2019, STEMM FIRE was built around a simple but powerful concept—bring STEMM professionals directly into rural classrooms, providing students exposure to regional and local STEMM careers they may have never seen. In just a few short years, this program has reached nearly 9,000 students statewide. In the 2024–25 school year alone, nearly 2,700 students participated in RAISE Kansas programs, an increase of 1,100 students over the prior year.

“We are doing very well with our rural school program, which is exciting to see,” said Lindsay Schmidt, executive director of RAISE Kansas. “We’re seeing more schools reaching out and asking us to visit.”

In total, nearly 100 volunteers—including professionals from Textron Aviation, Kansas State University, Washburn University, Emporia State, and Fort Hays State—helped bring career exploration directly into rural classrooms this year. Schmidt also welcomed two new assistant directors, Earl Legleiter and Sailor-Anne Seiler, who helped deliver programs to Kansas students.

“Anytime we can bring in professionals to talk about both their careers and the pathways to college or tech programs, that’s a powerful double exposure for our students,” Schmidt said. “It helps them see what’s possible—and what it takes to get there.”

The program’s reach continues to grow, thanks to new initiatives like the Educonomy Pilot Program—an innovative effort modeled after Colorado’s Homegrown Talent Initiative. Educonomy brings educators, business leaders, and students in each community together to discuss local workforce needs and design homegrown solutions to enhance the rural workforce. The goal: building stronger relationships between districts and rural employers to develop community-specific learning pathways and opportunities that prepare students for meaningful careers in their own communities.&nbsp;

“Districts and their rural employers are discussing what the most successful graduate would look like for their specific community and trying to figure out the needs of the community and build upon those skill sets in their school systems, such as providing certificate programs and more local internships,” Schmidt said. “It’s important for rural employers to be a part of the production of their local talent, not just the consumption of it.”

The pilot is currently underway in five Western Kansas school districts: Norton, Lincoln, Dighton, Stafford, and Hodgeman County. Now, six to nine months into a three-year timeline, participating communities are already seeing early momentum.

With strong community support and a growing network of partners, Schmidt says RAISE Kansas is only getting started.

“We are there to offer a liaison to different entities across the state with connections and ideas,” she said. “I’m excited to see what a difference RAISE Kansas, through Fort Hays State, can make in rural communities.”

Meanwhile, RAISE Kansas continues to energize students with real-world learning experiences. One standout event this year was the first-ever Hays Kansas Science Festival, organized in collaboration with STEM Harvest, the Hays Public Library, and local partners. The May event welcomed over 1,200 attendees to downtown Hays, with hands-on science exhibits like stomp rockets, telescopes, Tesla coils, drones, and robotics.&nbsp; K-12 students were encouraged to explore the world of STEM and see regional employers in action.

“Our partnership with RAISE Kansas through the Science and Mathematics Education Institute reflects FHSU’s commitment to serve rural Kansas,” said Paul Adams, Dean of the College of Education. “Together, we are creating experiences that connect students with local professionals and illuminate career pathways – right in their own communities.”

“This work doesn’t just inspire students; it builds capacity and hope for the future of rural Kansas.”

 </figure>FHSU University CommunicationsIn its first year partnering with Fort Hays State University’s Science and Math Education Institute (SMEI), RAISE Kansas is making big strides in connecting rural students with career-ready opportunities.RAISE Kansas—formerly known as STEMM FIRE—is a rural education initiative powered by a Patterson Family Foundation grant and generous donors. Its mission is to expand opportunities for young people in rural Kansas by providing hands-on experiences, mentorship, and exposure to high-demand careers in science, technology, engineering, mathematics, and medicine (STEMM).Formed in 2019, STEMM FIRE was built around a simple but powerful concept—bring STEMM professionals directly into rural classrooms, providing students exposure to regional and local STEMM careers they may have never seen. In just a few short years, this program has reached nearly 9,000 students statewide. In the 2024–25 school year alone, nearly 2,700 students participated in RAISE Kansas programs, an increase of 1,100 students over the prior year.“We are doing very well with our rural school program, which is exciting to see,” said Lindsay Schmidt, executive director of RAISE Kansas. “We’re seeing more schools reaching out and asking us to visit.”In total, nearly 100 volunteers—including professionals from Textron Aviation, Kansas State University, Washburn University, Emporia State, and Fort Hays State—helped bring career exploration directly into rural classrooms this year. Schmidt also welcomed two new assistant directors, Earl Legleiter and Sailor-Anne Seiler, who helped deliver programs to Kansas students.“Anytime we can bring in professionals to talk about both their careers and the pathways to college or tech programs, that’s a powerful double exposure for our students,” Schmidt said. “It helps them see what’s possible—and what it takes to get there.”The program’s reach continues to grow, thanks to new initiatives like the Educonomy Pilot Program—an innovative effort modeled after Colorado’s Homegrown Talent Initiative. Educonomy brings educators, business leaders, and students in each community together to discuss local workforce needs and design homegrown solutions to enhance the rural workforce. The goal: building stronger relationships between districts and rural employers to develop community-specific learning pathways and opportunities that prepare students for meaningful careers in their own communities.&nbsp;“Districts and their rural employers are discussing what the most successful graduate would look like for their specific community and trying to figure out the needs of the community and build upon those skill sets in their school systems, such as providing certificate programs and more local internships,” Schmidt said. “It’s important for rural employers to be a part of the production of their local talent, not just the consumption of it.”The pilot is currently underway in five Western Kansas school districts: Norton, Lincoln, Dighton, Stafford, and Hodgeman County. Now, six to nine months into a three-year timeline, participating communities are already seeing early momentum.With strong community support and a growing network of partners, Schmidt says RAISE Kansas is only getting started.“We are there to offer a liaison to different entities across the state with connections and ideas,” she said. “I’m excited to see what a difference RAISE Kansas, through Fort Hays State, can make in rural communities.”Meanwhile, RAISE Kansas continues to energize students with real-world learning experiences. One standout event this year was the first-ever Hays Kansas Science Festival, organized in collaboration with STEM Harvest, the Hays Public Library, and local partners. 3 hospitalized after car and pickup collide on Kansas highway

ELLIS COUNTY —One person was injured in an accident just after 11a.m. Monday in Ellis County.

The Kansas Highway Patrol reported a 2019 Chevrolet Suburban driven by&nbsp; &nbsp;Kenneth W. Nelson, 75, Andover, was westbound on Interstate 70 just west of Yocemento Avenue.

The SUV traveled off the roadway to the right, struck a guardrail and rolled. EMS transported a passenger Helen O. Nelson, 73, Andover, to Hays Medical Center.&nbsp; The driver was not injured. The passenger was not wearing a seat belt, according to the KHP.

The Ellis County Commission will review ongoing challenges with road maintenance and right-of-way limitations during its 8:30 a.m. meeting Tuesday.

Many roads, especially lesser-traveled or non-Federal Aid System routes, were constructed with narrow statutory rights-of-way that are&nbsp;inadequate for modern equipment or proper drainage.

Areas with insufficient right-of-ways and inconsistent county maintenance practices will be evaluated individually.

Brendan Mackay, Ellis County public works director, will discuss with the commission whether to close or construct the unbuilt portion of Don Street in Munjor and an adjacent alley.

Adjacent property owners have requested that the road be closed to stop unauthorized traffic on private land. At the same time, another resident has asked for the road to be constructed and the alley improved.

Lyle Pantle, Ellis County assistant fire chief, will request the commission to adopt the March 2025 update to the county’s Local Emergency Operations Plan. The update includes minor changes and new features, such as a mapper tool for disaster response coordination.

The commission will review and provide feedback on any desired changes to the first draft of the 2026 departmental budget.

'No Kings' protest draws crowd in Hays

Thunder on the Plains returned to Hays and Municipal Park for its annual car show, which included a special wish reveal for a local girl.

The car show hit the road Friday from Big Creek Crossing, cruising into downtown Hays and ending at the Park. The event featured cars, trucks, motorcycles and tractors from across the region, leading to a live auction on Saturday.

Before the live auction kicked off, 12-year-old Kinley Niernberger of Hays was introduced to the crowd and shared her journey with the Make-A-Wish program.

Kortney Niernberger, Kinley's mother, said her daughter was diagnosed with a brain tumor in March 2024 and underwent an eight-hour surgery at Children’s Mercy Hospital, where doctors removed 80% of the tumor.

"They had to leave some behind because of the location," Kortney said. "Kinley got referred to make a wish because she had a really hard time with her age and diagnosis."

Kinley has a grade one Pilocytic astrocytoma located on her brainstem. She continues to have scans every three months and is on a two-year medication cycle.

Since then, she has made a strong recovery, returning to dance and earning a spot on the Hays Middle School cheer team.

"She's always had a smile on her face... It's great that this organization does this for these kids, to give them hope and feel like normal kids for a week," Kortney said.

Kinley lives with her parents and two brothers. Her mom describes her as bubbly, spirited and determined. She loves the color pink, is a big fan of Taylor Swift, enjoys watching "Stranger Things" and playing Roblox.

CeCe Etter, donor relations manager for the Make-A-Wish Foundation of Missouri and Kansas, said over 50 children in Kansas are currently waiting for their wish. Each wish costs an average of $10,000.

"When the community comes together for events like Thunder On The Plains, it directly impacts local families like Kinley's. A wish is not just a moment of hope. It's a lifetime of positive memories that overtake the difficult ones," Etter said.

Etter said without the Hays community's support, Make-A-Wish would not be able to fulfill its mission of granting life-changing wishes to children like Kinley.

Thunder on the Plains delivers classic rides, grants wish for Hays girl

Internships at Fort Hays State University do more than build resumes – they launch careers. Just ask Dinah Newman and David Fretes, two recent graduates whose hands-on internship experiences opened doors to full-time roles in their fields. Whether organizing community events in Beloit or navigating healthcare management in Colby, both Dinah and David credit their internships, supported by the Dane G. Hansen Foundation and FHSU’s career development network, with helping them turn classroom learning into career success.

A few days after her May graduation from FHSU, Newman, a native of Great Bend, stepped into a full-time role as Programming Coordinator for the Hays Chamber. This position, thanks in part to internship opportunities Newman landed as an undergraduate, is where she’s “meant to be.”

Between her sophomore and junior year at FHSU, Newman was selected as a Dane G. Hansen intern, completing an internship with the Solomon Valley Economic Development in Beloit.

“That internship opened a lot of doors and helped me figure out what I wanted to do,” Newman said. “I had just switched my major from history to organizational communications. It was solidifying – I found out what I was supposed to do, which was reassuring. It was a full-circle moment.”

The internship also showed Newman the power of community involvement and the investment small communities make in sustaining the lifeblood of their organizations.

“The strength of Beloit’s community showed me the benefit of having a strong community buy-in,” Newman said. “In Beloit, my boss said you never know what you’re going to be doing. We did everything from a housing survey to get a grant. We would go out and talk to people, just trying to get buy-in and attendance at events.”

In her role with the Chamber, Newman helped organize the annual golf tournament this spring and will take the lead on that event for 2026. She will also organize the Chamber’s childcare appreciation event, membership lunches, ribbon cuttings, and sponsorship drives.

Newman gives great credit to her sorority, Alpha Sigma Alpha, for helping her develop leadership skills. She continued to stay active with the sorority, even as she worked two jobs and prepared for graduation.

FHSU’s community spirit has been an inspiration for Newman, who said her professors have always “been in my corner.”

Newman toured the Fort Hays State campus as a high school junior in 2020. Then, due to the COVID pandemic, university tours became virtual. FHSU was her only physical trip to a university campus.

“Hays felt like a very homey community, somewhere I could see myself in the next few years,” she said. “I love Fort Hays, the people, and my sorority. I can’t thank them enough for what they gave me.”

A self-professed “small-town person,” Newman sees herself staying in Kansas for the long haul. Her close ties and love for small communities give her a sense of satisfaction that she can’t imagine coming from living in a city.

Newman’s experience differs in many ways from that of David Fretes, who has been in the U.S. just over two years. Kansas is a far cry from his home of Asuncion, Paraguay, population 462,000, where he attained a bachelor’s in law. He heard of a sister state partnership between the U.S. and Paraguay where students could pay in-state tuition, so he applied to FHSU and Emporia State University.

FHSU offered a concentration in health care management, an industry in which he worked with his family in Paraguay.

“Fort Hays gave me the best offer,” he said. “I just decided to jump into it. I didn’t know much about Hays or Kansas.”

While working on his master’s degree, Fretes kept his eye out for internships and found an FHSU/Dane G. Hansen Foundation Internship opportunity with Citizens’ Medical Center in Colby.

“I always valued practical experience, as work experience helps to let you know if you would like to build your career in that particular field,” he said. “It got me interested, and I started asking some questions about internships and applied for two or three.”

He was offered an internship at Citizens’ Medical in Colby, a town much smaller than the capital city of Paraguay, which was a big change for David.

“I think accepting the internship took some boldness on my part for sure,” he said. “The only thing I knew was that I had a job and a place to stay (in the Colby Community College dorms). Those were the only two things.”

Carol Solko-Ollff helped arrange living accommodations for Fretes in the CCC dormitories, as a rental for the summer would have been difficult to find.

“It was perfect because it was right across from the hospital, and I didn’t have a car at that time,” he said.

According to Solko-Ollff, internships are a valuable part of FHSU’s international educational experience.

“We appreciate employers like Citizens Medical Center for giving an international student from Paraguay the opportunity to not only learn and gain experience in the medical field but also share their personal experience from their home country,” Solko-Ollff said.

Internships provide beneficial experiences for students, enabling them to expedite their entry into meaningful careers, according to Lisa Karlin, FHSU’s interim director of Career Services.

“David’s internship with Citizens’ Health served as a springboard for his career,” she said. “As an intern, David demonstrated he was a good fit for the organization. When given the opportunity to continue working in this supportive climate, he accepted the offer.”

“It was an amazing thing,” Fretes said. “I already knew the people at the hospital, and they were open to working around my interests. They asked me what I would like to do, or what department I would like to work in next. I expressed my interest in projects I had done in my internship and mentioned that finance and human resources were among my interests.”

Fretes now works in a blended position, mainly involving human resource duties. He said recruiting for hospital staffing positions in a community of around 5,000 people can be challenging. However, the hospital is a valuable employer for the area.

“One of the reasons I decided to come back to Colby is because they are very good people to work with,” he said. “I knew I would find a good place to work instead of going out into the unknown.”

“I had an idea about the town and the hospital. They provide a good service for the community and the employees. They try to make the employees feel welcome. I think that is very important.”

Although he has enjoyed his time iwestern Kansas, Fretes said he will return to Paraguay to serve his country and to work on some professional projects he has in mind.

“Another thing I learned here (at Citizens’ Medical) is that they invest a lot in education, continually participating in webinars or talks, always looking to improve professionally to serve their people better,” he said. “All that experience and growth will be helpful for me to take back home.”

As Newman steps into her full-time role in Hays and Fretes prepares to return home to Paraguay, both are aware of the value of their FHSU experiences and internships in shaping their personal and professional journeys. Their stories underscore FHSU’s commitment to providing real-world opportunities for its students, whether they are building careers in western Kansas or taking their skills to the global stage.

Kansas Wetlands Education Center to offer Nature Crafts summer programs

There is nothing like the taste of fresh vegetables that come straight to the table from the garden, and often when there is a produce surplus folks turn to processing options such as freezing or canning to make it last throughout the year.

In anticipation of that summer season, I would like to offer tips on how to have a successful canning experience. Preparing now can help prevent problems in the middle of canning later on this summer.

First, make sure everything is working properly. 

Canning jars and rings should be free from cracks and no rust on the rings. Hand washing the lids and rings is recommended to keep them from rusting prematurely. Lids, however, cannot be used more than once. Now is a good time to go buy them. 

Next, make sure your canner is in good working order. Dial gauge canners need their valves and gauge checked. Your local extension office can test the gauge for Presto, National, Maid of Honor and Magic Seal canners. Check the seal between the pot and lid, looking for cracks or dried rubber. If the seal isn’t good then the canner will not get to the proper pressure. The rubber plug can also wear out and sometimes need replaced.

As far as preparing the food, it is recommended to remove the peels to prevent unintended bacteria growth.

After the jars have been processed, they should be placed on a towel on the counter in an isolated place, with no drafts and allowed to cool down naturally.

Finally, write the date the food was canned on the lid before putting them in storage. It is recommended that jars be used within one year and rotate them out for next year’s supply.

And just a reminder about canning recipes. 

Information about food comes at us from many directions. We might scroll through Facebook, Pinterest or another social media platform and be attracted by a new recipe. Most of the time, recipes for main courses or desserts will not pose food safety risks. Maybe a friend told you about a new canning method. Food preservation recipes that have not been tested for safety could be harmful, or even deadly if the canned food contains the toxin that causes botulism. 

These are some questions to ask yourself:

• Who is the author of the research or publication?

The U.S. Department of Agriculture and universities have conducted reputable food preservation research.

• Is the food preservation information based on current scientific research or opinion?

Outdated canning recipes should be retired. An exception: if ingredient amounts and processing times are exactly the same as current food preservation recipes, they could be used.

• Where did you find the information?

Examine the URL on the website. Does it end with “.edu” (indicating a university or other educational organization) or “.gov” (indicating a government site)? Universities and government sources are credible sources of food preservation information.

Please make sure your canning recipes are from credible sources before trying them. While home canning can be a safe and convenient way to store food, it must be done safely.
