LOGAN-The Hansen Museum Continuing Education Program is pleased to welcome certified Bob Ross instructor Amber May of Aurora, Colorado to teach two Joy of Painting classes on February 17th and 18th. On Saturday, February 17th, the class will paint “Western Expanse,” and on Sunday, February 18th, “Mountains at Sunrise.” Classes are held in the Hansen Museum Community Room, 110 W. Main Street, Logan, KS, from 9:00 a.m. to 3:00 p.m. with an hour-long lunch break each day.

The Bob Ross method is designed to be a fun and simple way to paint. Beginner friendly, participants will be guided step-by-step to complete a painting each day just like Bob did on TV. All painting supplies are provided, and no previous experience is necessary. Students need only bring a roll of paper towels. Young and old alike (13 and older) will enjoy the camaraderie of these classes.

In my last article on budgeting, I referenced saving money and an emergency fund. I wanted to spend a little more time on this topic since its an important one.

Growing your savings requires a plan. It starts with a budget. There are many ways to save money the key is finding which one works best for you. The easiest way is to set up an automatic deposit from your paycheck. Most banks and credit unions allow you to automatically transfer funds into various accounts on a regular basis. Emergency savings should ideally be placed in an easily accessible account at a bank or credit union that will not charge you taxes, maintenance, or early withdrawal fees. Ideally, you would be able to earn interest on the money in your savings account.

If you don’t have money in savings then starting small is a good plan. Perhaps saving 5-10% of your paycheck or even $10 a week. The goal is to get to $500-$1,000 as soon as you can. That amount will usually cover repairs on appliances or vehicles, etc. Another way to save money is to create a savings plan. You figure out how much money you’ll need to save as a goal. Then divide the amount of money you want to save by the number of weeks you have to save it. That is your weekly savings target. You can try to increase savings by cutting out wants such as eating out or canceling cable or subscriptions for a while.

Tax time is a good time to save if you are getting a refund. Consider using all or part of a refund for savings. You can have your refund automatically placed in your savings account and then you don’t even have to think about it. So easy! Other one-time opportunities to save would be gifts of money for birthdays or holidays.

Once you have your emergency fund you will want to make sure you only use it for emergencies. An emergency fund is a cash reserve used only for unplanned expenses or financial emergencies. The Consumer Financial Protection Bureau defines emergency fund as savings that can be used for large or small unplanned bills or payments that are not part of your routine monthly expenses and spending. Some examples include car repairs, home repairs, medical bills, or loss of income. A vacation is not an emergency. Neither is the cute outfit or shoes that are on sale.

Having an emergency fund allows you to have a buffer when life happens. This allows someone the freedom of not having to use credit cards or loans, which can lead to debt that is harder to pay off. Having savings is particularly helpful for those with an irregular income.

Once you have a minimum amount in an emergency fund you may want to think about having more in the emergency fund for bigger emergencies such as an unexpected job loss. Having a few months of expenses in savings can be a buffer when the unexpected happens.

Learning to save money is a lifelong skill. Just like budgeting it can take some practice, so don’t give up. You will be pleased with the results. Happy saving!

He was so disappointed, the Assistant Pro said he would play with him and would give him a 12 stroke handicap. The old man said, “I really don’t need a handicap. The only real problem I have is getting out of sand traps.” They both played well. Coming into the par-three 18th, they were even. The pro had a nice drive to mid-fairway and would be able to get on the green with the next stroke and then putt for a par with the following play. The old man hit a long drive, and the ball landed in one of the two sand traps around the hole. Shooting from the sand trap on his second stroke, he hit a high ball which landed on the green and rolled right into the hole! The Assistant Pro was stunned. “Nice shot, but I thought you said you have a problem getting out of sand traps.” “I do,” replied the old man, “give me a hand!”

Jacob Proffitt is opening a new restaurant inspired by his mother Shirley's Volga German cooking, Shirley's German To Go.

The restaurant, 515 W. 27th St., Hays, will offer Volga German favorites, such as bierocks, galuskies (cabbage rolls), grebel, green bean dumpling soup, fried noodles and beans, sauerkraut and sausage, as well as fish and chips (home-cut french fries).

"Everything in here is from scratch," he said.

The restaurant is still working on what desserts will be offered.

The restaurant had been a pizza place called Little Dinero, also owned by Proffiitt, but he decided to go with another option.

"Most of the community here is German and we always thought it was weird that there was no German restaurant," he said. ... "I grew up on my mom's German food."

Betty Froelich&nbsp;ran a restaurant in Gorham, and Shirley's German To Go will be using some of her recipes.

Even in Ellis County, the family recipes varied from town to town and family to family. Shirley's family settled in Liebenthal, but the recipes for families in Catharine, also settled by Volga Germans, are slightly different.

"The only bad thing about a German restaurant is, we laugh, that people say, 'That's not the way my mom made it,'" Jacob said.

There are high, middle and low German foods.

Each week the restaurant will have specials. Proffitt encouraged locals to reach out to the restaurant and request some of their favorites.

The bierocks will be cooked a couple of times a day, so they will be fresh. The restaurant will offer both traditional bierocks with beef and cabbage, as well as ham and cheese. Both will run about $5 to $6 each.&nbsp;

You will be able to order in quantity, such as packs of six or 12.

The restaurant will accept call-ahead orders. Beverages will be sold from coolers, no fountain drinks. No alcohol will be served.

The restaurant has a small dining area, but Proffitt said he anticipates most people will get their orders to go.

Proffitt plans for the restaurant to be open from 11 a.m. to 9 p.m. seven days a week.&nbsp;

A website and Facebook page are pending for the business. Proffitt said he hopes the restaurant will be open in the next two weeks.

 </figure>"Most of the community here is German and we always thought it was weird that there was no German restaurant," he said. ... "I grew up on my mom's German food."Betty Froelich&nbsp;ran a restaurant in Gorham, and Shirley's German To Go will be using some of her recipes.Even in Ellis County, the family recipes varied from town to town and family to family. Shirley's family settled in Liebenthal, but the recipes for families in Catharine, also settled by Volga Germans, are slightly different."The only bad thing about a German restaurant is, we laugh, that people say, 'That's not the way my mom made it,'" Jacob said.There are high, middle and low German foods.Each week the restaurant will have specials. Proffitt encouraged locals to reach out to the restaurant and request some of their favorites.The bierocks will be cooked a couple of times a day, so they will be fresh. The restaurant will offer both traditional bierocks with beef and cabbage, as well as ham and cheese. Both will run about $5 to $6 each.&nbsp;You will be able to order in quantity, such as packs of six or 12.The restaurant will accept call-ahead orders. Beverages will be sold from coolers, no fountain drinks. No alcohol will be served.The restaurant has a small dining area, but Proffitt said he anticipates most people will get their orders to go.Proffitt plans for the restaurant to be open from 11 a.m. to 9 p.m. seven days a week.&nbsp;A website and Facebook page are pending for the business. Proffitt said he hopes the restaurant will be open in the next two weeks.
