Ellis Co. restaurant and lodging inspections, 1/20 – 1/26

Last week's inspection results from the Kansas Department of Agriculture

Holy Family Elementary School - Jan. 22 - 1800 Milner, Hays

A routine inspection found two violations.

  1. On the self service buffet line there were two containers of commercially made salsa that were not under the sneeze guard or covered in any way. 
  1. On the self service buffet line there was a container of cut lettuce that was at the temperature of 46 F.

An inspection following a complaint found five violations

  1. In the refrigerated prep table in the server station there was a container of whip topping that did not have a date of when it was opened. 
  1. On the cooking line there was a container of hush puppie mixture with no time stamp present. 
  1. In the back storage area there were eight food grade plastic lids and seven food grade plastic containers that have deep cracks along the corners and base of the containers. These containers are used in direct contact with food. 
  1. In the back storage area there were five of nine food grade containers that are being stacked inside one another with sticker residue present along the base.
  1. In the back chemical storage area there was several assorted chemicals that were being stored on a wire rack directly above a case of single use gloves. These gloves are used in direct contact with food. There was a opened case of oven cleaner that was leaking.

An inspection following a modified complaint found no violations.

Chartwells, Memorial Union - Jan. 21 - 600 Park St., Hays

A routine inspection found five violations.

  1. In the Starbucks outlet there was an employee who had dropped a single use cup on the floor. She then proceeded to pick up the cup with her bare hand and place it on the counter. She then grabbed a clean single use cup and wrote a name on the cup for use.
  1. In the two-door True refrigeration unit in the main kitchen there was a container of fully cooked elbow pasta that was cooling down. Temperature of the pasta was 82 F. Person in Charge said that the pasta was cooked and cooled at 9:30 a.m. Inspector took the temperature at 3:30 p.m. 
  1. On the buffet line there was a container of fully cooked chicken at the temperature of 107 F. 
  1. In the Mondos Subs outlet there was sliced tomatoes that was in the refrigerated prep table at the temperature of 48 F. Ambient Temperature of the table was 41 F.  On the Salad buffet line there was sliced chicken at the temperature of 51 F.  On the counter in the main kitchen there was a container of heavy whipping cream at the temperature of 58 F. 
  1. In the pizza outlet there was a ladle with dried food residue present along the head of the ladle. In the main kitchen there is a knife storage area that had two of five knifes with dried food residue present along the edge of the blade.

Thomas More Prep-Marian High School - Jan 21. - 1701 Hall, Hays

A routine inspection found one violation.

  1. On the storage wall next to the walk-in cooler there were three of six rubber spatulas that had imperfections present along the rubber heads.
